Serves 4
Ingredients:
2 tsp olive oil
1 knob of butter
1/2 brown onion, finely chopped
1 teaspoon minced fresh oregano
1/2 teaspoon minced fresh sage
1/2 teaspoon fresh cracked black pepper
3 cloves garlic, minced
1 cup cooking cream
100gr crumbled gorgonzola cheese
100gr fresh baby spinach, roughly chopped
4 teaspoon pine nuts
Grated Parmesan cheese, for topping
Method:
In a fry pan add olive oil and butter and set over medium heat. When the oil and butter is hot add the onion.
Saute gently until the onion are soft but not browned, about 5 minutes.
Add the garlic, oregano, sage, and black pepper. and saute for another 30 seconds or just until fragrant.
Pour in the ream and let it gently simmer for about 5 minutes or until the cream is slightly thickened.
Turn the heat to low and add in the gorgonzola cheese.
Stir gently to help the cheese melt into the cream, about 5 minutes.
When the cheese is almost completely melted into the cream add the baby spinach and let the warmth of the sauce help soften the fresh spinach.
Add in the cooked gnocchi or pasta and toss to combine.
To serve, sprinkle the top with chopped pine nuts and, grated Parmesan cheese.
